Caprese Salad

   Our farm share starts this week for the summer and I can't wait (pictures to come soon)! We get so many fresh vegetables and they taste so much better than what you can buy in the grocery store. One of my favorite things to make with the farm ingredients is a Caprese Salad. It's super easy to make and so tasty! All you need is:

Tomatoes
Fresh Mozzarella
Fresh Basil Leaves
Extra-Virgin Olive Oil
Balsamic Vinegar
Salt and Pepper
Toothpicks

1. Slice thin slices of the tomatoes and mozzarella. Wash and pat dry the basil leaves. 
2. Using a toothpick to hold everything together, poke on the tomato slice, then the mozzarella, then a basil leaf. Repeat to the end of the toothpick.
3. After you have made all of the toothpicks you want, drizzle on top the olive oil and balsamic vinegar.
4. Top with a little salt and freshly ground pepper.
5. Enjoy!



   Not only does it look pretty but it tastes great! Last year I ate so many basil leaves that I got a stomach ache, so be careful not to overdo it!
