Chicken & Biscuits

   We usually eat pretty healthy here in the MIM household, considering the difficult diets we have to accomodate, but every now and then I long for some comfort food. One of my favorite comfort food dishes to make is Chicken & Biscuits! It's super easy and very tasty. Plus, when I can get both my husband and child to eat a dish, I know it's a success! This recipe is enough for my small family with some leftovers for the next day.

Chicken & Biscuits

Ingredients:

1 Package of Boneless Skinless Chicken Breasts
2 Tablespoons of Butter or Margarine
2 Cans of Cream of Chicken Soup (Low Fat)
1 (14 ounces) Can of Chicken Broth (Low Fat or Fat Free)
1 Onion
1 Package of Frozen Peas
1 Package of Frozen Broccoli
1 Tube of Biscuit Dough (We like the Pillsbury buttermilk ones!)

Preheat oven to 350.

Directions:

1. Mix soup, butter (softened in microwave), broth, diced onion, and frozen vegetables in a bowl. Set aside.
2. Cut up chicken breasts into small squares. Put in rectangle Pyrex dish coated in cooking spray. Cover with soup mix.
3. Bake for 45 minutes. 
4. Towards the end of the cooking time, prepare the tube of biscuits as directed on package.
